White Chicken Chili

An easy, nutritious and energy efficient recipe for all (including picky eaters) is a great way to enjoy cooking while you save. Follow along with our video below to get started...


Prep time: 10 mins

Cook time: 8 hours on low, or 3 hours on high

Servings: 4


  • 1 pound chicken breasts
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • ½ teaspoon of garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper (omit if you are very sensitive to spice)
  • 2 cloves of garlic (minced)
  • 1 cup chopped onion
  • 2 (15 ounce) cans of white beans, rinsed and drained (we used great northern beans)
  • 1 (4 ounce) cans of diced green chilies (mild)
  • 2 cups low sodium chicken broth
  • 1 cup frozen corn
  • Garnishes optional: cilantro, radishes, avocado, tortilla strips, sour cream or shredded cheese


  • Place chicken, spices, garlic, onion, beans, green chilies, garlic and chicken broth in slow cooker.
  • Cover and cook on low for 8 hours, or on high for 3 hours until chicken is cooked through.
  • Remove chicken and shred.
  • Optional use an immersion blender to puree as much of the chili as you’d like.
  • Return chicken to slow cooker.
  • Stir in frozen corn.
  • Cover for a few more minutes until corn is thawed and warm.
  • Serve and top with your favorite toppings.
